1. What gravity did you target? 11P?
2. Did you drop the pH in the reactor? Getting the pH below 3.4 should prevent any of the less desirable bugs from growing and emphasize LAB.

There are a few more final frontiers but this is definitively a big step towards the goal.
Any reason why you didn't throw in a handful of malt and proceed?
Indeed it does take a bit of time for a culture to develop and settle, but I find it faster this way.
FYI the Hefebank Weihenstephan sells the cultures, for those in a hurry.
Sauergut is the most undervalued aspect in German brewing.
