The phytase that is utilized during an acid rest to lower pH is kilned out of a highly modified grain, for example.

People do phytic acid rests on weissbiers using well modified malts all the time. There's still active phytase. Even undermodified malt is kilned at normal Pilsner malt times and temperatures. How does phytase survive then? I don't follow how degree of modification affects enzyme stability during kilning.

I speculate one could take a large amount of chit malt, and use that as a modification gauge. But in all reality, I don't know you want undermodified grain. The Least amount of time in the mash tun the better.

No - I'm pretty sure that I won't catch the biggest trout. The trout that I catch though (if I catch a trout) will be the trout that I wanted, lol. There is a lot more to catching trout than just catching trout.

With the right mindset and basic equipment, those trout are easy to catch. But you've got to get in the right area to find them.

The last time that I went fishing I tripped on a root on the long, uphill climb back to the dirt road where my car was parked. It wasn't until I was halfway down the mountain that I realized that I wasn't wearing my glasses any more. Back to the trail, back to my glasses, back to the car, etc. That part of my trip alone took over an hour.

Sometimes brewing feels the same way; sometimes a trout will sip on the first fly offered. Mindset.
