Doing an Altbier

I plan on doing an Altbier but could use idea for a dry yeast. Shipping liquid to Hawai`i is expensive.

I could buy WLP029 German Ale/ Kölsch Yeast locally but it costs $8 and I don't have a starter plate.

You don't need a starter plate, or stir plate. Just build it up in steps. I brew 13 gallons of Pilsner and have to do a 2 or 3 step starter. Buy the $8 local yeast. Up here in Canada, our liquid yeast is more than that and shipping is expensive also. You can make a starter plate from recycled computer fans, You Tube will show you how.

I believe Fermentis Safale K-97 is an Altbier strain, or maybe it is a Kölsch strain. I'm not sure which it is.

Wow, I have to say, I never know K-97 was a German ale yeast. I have never tried it.
