I recommened Weyermanns Barke pilsner malt, it will definitely help to create that German Beer flavor.

Best Malz, to me, gives a slightly honey grahams character. Your comment about honey in the Barke malt made me think of that.
Northern Brewer has the Weyermann Barke malz now, I saw.

I've had good results with avangard Pilsner malt. I also would like to try Swaen malts.

I've tried Swaen golden dark munich in a Rauchbier and a Bohemian pilsner, but I have yet to taste the finished product before I can recommened it.

I like Weyermann best, followed by Best. Avangard tastes like hay/grass to me and is lacking the graham cracker and fresh bread flavors Weyermann has.
