Thanks for posting this. I friend of mine is the brewery at my local Gordon Biersch, and wheat is a part of their recipe. They also have a proprietary strain kept for them by White Labs. I can't wait to try it

I found it interesting that he cited Kolsch malt, which is the kilning and color of vienna malt, but not how it is used. Then later on in the article, he stated he wanted to try Best Heidelberg and chit malt, which would make the lightest, palest kolsch possible. There must be more to that story...
