They are also using ale yeast as well. It doesn't seem to handle, tolerate or utilize sulfites as well as lager yeast.

True, but there are ales out there with the LODO flavor. Guinness comes to mind. A well-designed large scale low oxygen brewhouse shouldn't need any SMB.
