A small success
Doesn't mean much but I was very excited to see the difference in color between my FFT and the sample I just took for a gravity reading:
Currently @ 35% attenuation after 3.5 days and the sample tastes incredible. Honey & cheerios all the way.

A small success
I've found with the cold ferments that I don't taste diacetyl anymore, it's always honey. My theory is that bc of the slower metabolism, the yeast are excreting more 2,3 pentanedione than 2,3 butanedione. Both VDK's will get cleaned up by the end of fermentation and lagering.

I have massive amounts of diacetyl in every fermentation - don't worry. It will go away during lagering as long as the yeast are kept active.

Second LODO is tasting so damn good, it's going down too damn fast. Brewing 3 gallons was probably a mistake!

Absolutely a good looking beer. The color is spot on for a 96/4-esque recipe. None of that weird orange hue from HSA.
