Agreed, I'm sure it wasn't written sarcastically. Germans do have different expectations when it comes to brewpub beer vs. commercial beer, and the former can still certainly be enjoyable.
The fact still does stand that as far as leading academics like Kunze are concerned, low oxygen isn't easily attainable at small scale.

Well, within the constraints of the RHG I think he's correct.
Some people say that the RHG nowadays is little more than a protectionist law which prevents upstarts from being able to compete with the large, established breweries.

Vienna in a Helles?
Brewing salts are allowed under the RHG as long as they are added to the brewing liquor and not the mash. I don't see why sulfite isn't RHG compliant when gypsum is allowable.

The RHG is purely protectionist.
One of the reasons Germany adopted the RHG is because the adoption of the law across Germany was one of its conditions Bavaria insisted on when joining (from this perspective, the modern Germany is actually much younger than the USA).
I don't think it's for emotional reasons this happened. In those days Bavaria's main economy was agrarian and beer was one of its main exports.
Obviously, the negotiators of the time wanted to protect their main industry.

It's how you estimate the number of cells in a dense slurry based on physical counts from a sample of known volume. If you don't trust their counts, then don't trust their counts.

The excel sheet is mine. The cell counts for a 50 ml sample are Wyeast's, which I cited in the links. I'm not interested in asking how many cells are in a arbitrary sample volume, I want to know how many cells I have for a given volume (or weight) of dense slurry.
