An email I rcvd from Hofbrau suggested they use some Munich, (10%?) in that beer.

Definitively.

Why not try about 4-5% of Vima 8 + 8% Muma next time?

When you don't filter you need to go easy on the aromatics.

I've been using vima in my latest and they are very nice. Haven't done muma but it's in the works. I was thinking 5-7% Best dark muma, I really like that malt.

5-7 Muma 25 EBC is a bit too hefty for a Helles.

FYI - the muma I liked best is floor malted in Suffolk (GB) and comes at 12 EBC. Since it's more or less local, I can get the bags quite cheap too :D (£13.- 25kg)

Everyone needs to find their own. Also, beware that there is quite a range of Pima/Helles malts out there, and quite a few approaches. Unless you work with exactly the same raw materials, emulating the results becomes a tricky affair.

I have several. Depends what the mood is.

The 10 vima 3-4 c25/30 definitively makes for a nice drink! Ricardo's recipe is also not be be sneered at.
