I'll build up another recipe adding carahell for the next brewday, won't be till I get back from vacation in may, unfortunately.

Some proportion of carahell really needs to be in there. You could try 8% of carahell @ EBC 25

I like the flavors of the bruhmalts better than the karamalts. I would cut the carahell in half.

I think he would need to cut down the Vienna as well if he wants to accomodate Bruehmalz.

It's too early to tell. Let it finish and condition properly before you destroy a perfectly good brew.
Many people do that when it comes to lager.
Give it time and dont panic. You are looking at 8 weeks min.

I like the looks of your last recipe, i just tapped a 10/vima, 3/carahell that turned out really nice. Next time I'll either up the carahell to 5% or I'm going to try a 90/10 Pima/Munich.
