I took a gravity reading, it's telling me it at 1014, it's 1 point away from spunding keg ready after 3 days? I just brewed this Saturday, is that even possible?

Hydrometer is what I used, I did not degass the sample, it does have small bubbles in it

If anything, ie temperature to low or dissolved gas present, then your readings are higher than what you expect, not lower. Without detailed logs it's difficult to see what is going on though.

Og 1042 Saturday at 4 pm est temp 50°f
Pitched 1.75 litre starter 34/70 that was started 48 hours in advance and kept at 48°f
Expect fg is 1007
72 hours later the hydrometer reads 1014.

It's been fermenting at 48°f since pitching
48 hours after pitching I had vigorous airlock activity. Today activity is slower but still vigorous approximately 40 bubbles per minute.

The sulfur aroma is decreasing the grain aroma is coming back out, the gravity today was 1012

There are loads of twists and turns re flavours during fermentation. Don't drive yourself crazy. Lager it for an appropriate time frame and let the yeast do it's job undisturbed.

I would not use gypsum when working with sulfites.

That's the plan, I am taking the down time to study water, and how to build water profiles.

I was thinking about starting a chat room in the line app for German brewing, I'm just not sure if anyone uses it.
