Postby Crunk » Wed May 31, 2017 8:52 am

For the past two weekends since I have returned from my vacation I have been brew blocked by unexpected company and plans that came up that had to be taken care of this weekend it's not going to happen I will not be brew blocked again.

I'm going to lager this one with 34/70 second generation

Man, that's a damn shame.
I got two brews in this weekend, but was thwarted on my plans for a third. Still, I can't complain, having gotten two in the fermenter (festbier and ryr APA).

Had a quick change of heart while at my local hubs, here is the recipe I'm brewing Saturday, just need to decide whether I want to use, tettnanger, saaz, or mittelfruh. I'm fermenting cold at 48°f with 2nd generation 34/70.

Interesting grain bill. What do you try to achieve there? I'm interested in your approach as to why you feel you need to use so much of a darker pale malt in there, or at all!

What's the flavours you are shooting for?

I've done a couple of Pale Ale Malt Helles' - Bryan led the charge on that by blending pale ale malt with pilsner malt to target 4ebc.

I did one 50-50 Base Malt with something like 4-6% Carahell and another 100% Pale Ale Malt Base (maybe 5% CH) helles. The ale pale ale malt was interesting. Very intense malt flavor and a bit darker of a brew despite being brewed to a lower OG. Next Helles I think I'll do all PIMA and crank up the CH.

Since my Pilsner malt sack came in at 3.8ebc I may just use a lot of the Weyerman Pale Ale Malt for a change up brewing Bitters.

I have made several helles/pils with a 25% or less pale ale malt, all turned out great. But don't think more than 25% should be used for pale lagers. That said I just did a Partigyle maibock (actually clocked in as a pale doppelbock) and helles with 50/50 pils/ale malt and 4% hell. They are spunding now, so will comment latter on flavors.

But why? What does or did it give you? There are plenty of Bavarian lagers where the grist starts with very bright pilsner malt... So I'm curious as to what the aim is... or is it directionless experimentation (equally valid)?
