What percent chit malz would you guys use in s helles. I got a sack along with a sack of Barke Pilsner and like you all, I am chasing Edelstoff.

I'd stay away from spitzmalz. It's occasionally used to compensate for bad harvests or malting faults.

well modified malts are great to work with. Having undermodified malt won't make it suddenly better. It'll certainly make it worse to start with.

Best is to stay with a base malt, then slowly add a speciality malt to get a feel for it. It's a slightly longer process but it yields surprising results judging from feedback.

It's not a good idea to attempt more elaborate mixes before one has a good first hand experience of each component.

It doesn't have to be this way, but it's certainly my approach.
