I assume this technique requires you to use the freshest malt possible, correct?

Whatever you get from your LHBS is probably fine, as long as it's not 3 year old malt stored at 90 degrees F
If you always do what you've always done, then you'll always get what you've always gotten.

So quick question. I am planning on following the prescribed recipe and process, but I currently have an aluminium kettle. The way I understand it is that aluminium oxide forms almost instantaneously upon contact with the air, and it significantly more stable than copper/iron oxide.
Worth trying it?

Judging by this, I guess the Speidel BM isn't great, with the constant dripping during the mash?

A simple mini-mash in qt(pint) mason jars is all you need to see if this method works for you. Break down your quantities, do a normal batch with your normal methods, and one with ours, do a single infusion for an hour. Simple enough.

Guys: Just a quick clarification on something: When you guys say that even if everything is done properly (or close to properly)... the great character is "fleeting". How fleeting are we talking about? How quickly would you have to drink 5 gallons of helles before the character disappeared. I'm not holding anyone to it, just a ballpark. Thanks & cheers.

You're reading my mind, Ken. I just started a thread where we can discuss this.

Ken- Can you reference what you speak of from the paper? I don't think you have it right, but I want to make sure we didn't word something improperly.
