Very nice, indeed. Here's my version:

10 Gallon All-Grain

9 lbs Weyermann Pils malt
8 lbs Weyermann Munich I malt
.5 lb CaraFoam malt
3 oz Chocolate wheat malt

2 oz Perle hops @ 60 minutes
2 oz Spalt hops @ 60 minutes
2 oz Spalt hops @ 30 minutes
1 oz Spalt hops @ 15 minutes

White Labs WLP036 Dusseldorf Alt yeast

Mash schedule: 128F for 15 minutes, decoct to 148F for 60 minutes, decoct to 168F for 10 minutes

Est OG 1.056, IBU 45

Here's another version which uses a higher percentage of Munich.


10 Gallons

14 lbs Munich II
4.5 lbs Pilsner
.75 lb CaraMunich II
.75 lb CaraFoam
.25 lbs Carafa I

2 oz Perle 8%AA @ 60 min
2 oz Spalt 5%AA @ 60 min
2oz Spalt 5%AA @ 20 min

Decoction 128F/148F/168F

Est OG ~1.062
Est IBU ~48
Est color ~16SRM

WLP-036 Dusseldorf Alt Yeast

Gravity seems too high for an alt. Looks more like a sticke. With the lower gravity alts, I prefer the Munich base.
