Cool, thanks Ancient. I believe I looked at that system or one like it before. Are there any maintenance/usage concerns? If I only brew once every 2-3 weeks, do it need to be run/flushed periodically?

The media is best stored dry if you have a long interval between usages. A week or two is not a big deal. If you go a month, then screw off the canisters and dump the water out. I always let the first few liters go down the drain when re-starting the unit. The conductivity meter will tell you what maintenance is needed.

It's not an option for us in the midwest with 400+ hardness. I use a 4 stage, and 2-20gallon pressure tanks.

Whens this one getting tapped?

Following anxiously.

Bryan and I were chatting about this...I get a big floral/hyacinth/lavender whiff from Rade. Could there be late(r) hops? Maybe Hers or Mitt?

My latest thinking is that most German hops perform better the LONGER they are boiled, but I also understand the East Germans do whatever the H they damn-well please.
There's no easy way out. There's no shortcut home.

Fascinating, I just did a pilsner that was about 96% Belgian Pilsner and 4% Acidulated and it came out fantastic with Wyeasts Kolsch and Warrior bittering ( a very small amount) and a big Saaz addition early and a small 15, 10, 5 and whirlpool. It's fantastic!

My next iteration is going to use similar hops, 89% B. Pils, ~3% each of Carafoam, Carahelle and Acidulated and ~1.5% Melanoidan. This will be 12 gallons though so one will get the Kolsch 2565 again and I dunno what for the other. Maybe California Lager, maybe PNW Ale.

Keep in mind I carbon filter tap water and it's about 8 PH and small bicarbonate levels and nearly void of other minerals.

I found it a tad too strong at 4% in my Dunkel, was thinking 1-2% in a Pils but I think I'm going to go with cm3 at 2% instead. Probably 3% c25 as well.
