Kolsch Style

Kolsch is one of my favorite German beers. A little bit of wheat seems to make the head just that much whiter and fluffier without imparting much flavor. This was an old recipe and at the time I had Mt. Hood on hand. Spalt is my favorite hop here but any German noble type you like works well.

10 Gallons

15 lbs German pilsner malt (91%)
1 lb German wheat malt (6%)
.5 lb CaraFoam malt (3%)

2.5 oz Mt. Hood (5%AA) @ 60 minutes
.5 oz Mt. Hood (5%) @ 20 minutes

White Labs WLP029 German Ale/Kolsch yeast

Single decoction mash with decoction to mashout: 128F @ 20 minutes, 148F @ 60 minutes, 168F @ 10 minutes.

I'm a fan of the Schill Kolsch malt. Comes out light gold if used 100%, which doesn't bother me. 4:1 pils:Kolsch is tasty too.
