Seems like the equivalent of adding vodka to wort instead of yeast. Alcohol is alcohol, right?

A comparison between a kettle soured gose and one with added acid to the same final ph would be interesting. I suspect you would miss some flavors from esters etc. http://sourbeerblog.com/understanding-esterification/
