Boil your next wort for 120 minutes. Pull a sample at 60, 90, and 120. Now, since the longer boil will be more concentrated due to evaporation, adjust them all to the same gravity with distilled water.
Is the color exactly the same in all 3 after gravity adjustment? What about the flavor, sweetness, etc.?
My money says they're different. Arguing whether it's actually "caramelization" or not is arguing semantics.
