If the CO2 tank had enough left, should be ready by tomorrow night. Went with a 2-step infusion (protein rest mash in then infused to 150's) and then thin decoction to mash out. Hit my OG and FG and tasted pretty good on the way into the keg. Will post more info tomorrow on water chemistry and final beer if ready

If you were to use dark wheat, then would you completely replace the pale wheat with dark wheat? If not, then what percentage of the grist would be pale wheat and dark wheat?

What makes you say that 15% Caramalt is too much? Have you tried it?
I most certainly wouldn't change that at all.
In fact the only thing I would change in there is to swap the Pilsner with Munich 15.
It's a beautiful recipe actually. It's the perfect blueprint for a great Bavarian Weizen. Seriously. Just brew it and let me know what you think.

Sorry, I thought we were formulating a dunkelweizen. How would you change that recipe to make it a dunkelweizen?
