It's adjustable. It's the same one used on the CP bottle filled they sell.

It's set at 55, but its threaded and you can turn it to set pressure.

Ah, does it work well? I just built my prototype with from Mcmaster. The one you link is both stainless.... and cheaper.
The plan (if I end up liking the spunding) is to get a MFL CO2 manifold with check valves, flip the valves upside down to reverse the check, put the spunding valve on the end of the manifold and a gauge on the other to use for multiple fermentations at once.

Interesting. I wonder why the temp range only goes down to 40F.

Here are mine ready to go. To set the relief valve, I pressurized a keg to X PSI through the beer out post and adjusted screw till the soap bubbled on them.
Now to brew some beer!

Where did you find the female JIC (flare) to male 1/4" NPT adapter?
