I'm wondering if, given the inaccuracy of these meters at very low DO levels and the fact that pulling a sample and letting it sit out to take a reading will add some O2 means that the O2 in our beers may be even lower than we think.

If anyone splurges on a really expensive meter let me know haha

Yes, you can assume unidirectional movement at our levels. That's why on a relative scale, they are helpful in diagnosing the weak points in your system, despite not being the most precise.
