Any chemist that looks seriously at mash chemistry cannot deny the potential deleterious effects of DO throughout the brewing process. How much DO has been largely ignored, except for some extreme edge cases in a lab.

I already recommended the book - but I cannot say enough good things about it. Easily approachable by someone like myself that slept through Chemistry in college. Well described studies of reactions and the organic chemistry bits (proteins, enzymes, etc.) are laid out in an orderly manner. If anything - I wish it went just a bit deeper.

Fortunately - it's cheap, but I would put it as one of the most important books in my collection. Of course, reading it in head with Barth's funny little voice, nervous excitement makes it a fun read. He really is a cool guy.
