Hello!

I'm brewing my first LODO brew this week and have a couple of questions.

I plan to brew no-sparge and thinking about skipping the step-mash. I have a pump and could set up a HERMs system but I dont know if it is worth the risk. Is it worth the risk?

If I go with a no-sparge single infusion mash. What should I do about Vourlauf?

Should I:

1. Recirculate with pump
2. Dump the first halv gallon of first runnings

Grain bill is:

87% barke pils
10% vienna
3% carahell

I do no-sparge on my old system which was laid out for decoction mashing. HERMS is a bit of an investment, but it's definitively the best method for a home-brewer hands-down. If I were to re-design a home brew system, then I would go down the HERMS route without hesitation. My only advice would be to get proper pumps and not the overpriced chugger or march pumps.

I would not worry too much about my Vorlauf (first sparge runnings). When you see wort being lautered at the big six in Munich, you will most likely notice that it is suprisingly turbit. Somewhere around 30 EBC of turbidity (see Prof Narziss's books). So you don't need to have crystal clear wort. It's just another excuse for getting a lot more oxygen back into your wort. I'd sparge a bit faster, around 1 - 1.5l per minute flow rate, and would only do a Vorlauf to get debris and help the grain bed compact faster. On no-sparge you can pretty much kiss the vorlauf good-bye. There I pump it very slowly (750 RPM) straight into the boil kettle which gets switched on once 25% full in order to optimise time.

Any tips regarding brands and models of "proper pumps"?

220V, Norway. Is it just a power supply? I know very little about electricity.

Naturally you'll need one to match your motor. If you have a 3-phase supply (unlikely) then the inverters from Siemens are the best.
