I like 5% carahell + 2% caramunich a lot. I don't find it to be too sweet at all....but I also hop pretty heavily. A 12 plato beer with that grist still attenuates down to 2.3ish plato FG with 34/70 or 2206. Another favorite is 10% Munich + 5% carahell. 2% each of carahell and caramunich would probably be too little for me :lol: but then again I like my helles a bit more "robust" than most of the stuff you find in Munich. I am going for something more along the lines of Arcobrau or Aldersbacher...

Yeah, I tend to like my Helles more on the hoppy side as well, lately I've been shooting for 20-25 IBU. Also adding a little more vima, muma or Cara to the mix so I guess that helps balance the extra hops.

What do you figure the color is of HB Ofest? I keep emailing them for info on their recipes and they've been very forthcoming on their Helles but lately was told to try emailing later in the year when their brewmasters aren't as busy.

I don't have the paper slips for testing it. Usually they are in the 9-12 EBC range
