Do you use any chalk as buffer to allow for more lacto growth? Some people use 2g/l.

Very nice witeup Bryan! I enjoyed reading it!

There are a few more final frontiers but this is definitively a big step towards the goal.

Any reason why you didn't throw in a handful of malt and proceed?

Indeed it does take a bit of time for a culture to develop and settle, but I find it faster this way.

FYI the Hefebank Weihenstephan sells the cultures, for those in a hurry.

Sauergut is the most undervalued aspect in German brewing.

Here is my reactor V2 when it was made (you've probably seen it already).
