"Crazy mash" The Making of a Hefeweizen
Recipe:
So, the mash is split in 2 portions, the first portion is mashed at 62, then 70. It is then infused with cold water, brought down to 45. Once at 45, the rest of the grain is added and rested a bit. Then the decoction is pulled and you carry on.
