Decoctions and Rauchmalt

Postby Owenbräu » Tue Jan 12, 2016 4:06 pm

Should you do decoctions with rauchbiers? Is there any risk of loss of flavor from the extra boil time or from smoke compounds precipitating with hot break? Some other reason?

Do you do anything different when using rauchmalt in the mash?

Decoctions and Rauchmalt

I've made several, and I'm very fond of the style. I tried filtering it once and it stripped a lot of the flavor out. So, I never use finings and have been hesitant to do anything in general that removes ultra-fine particulates.

Made a unique one this fall, very tasty. Dopplestickerauchaltbier. I thought I was creating a new style, but apparently a couple breweries in Germany make a rauchaltbier. Oh well, it's still delicious.
