Direct heat, recirculated no sparge Hochkurz infusion.
Nowadays I do 20-30 minutes at 62c, 30 minutes at 72c, and 10 minutes at 76c.

I adjusted my circulation a bit and also dropped my mash pH to 5.2. No problems with attenuation, body, or foam

50 mg/l. I'm also doing a 60 minute boil with 10% total evaporation.

Those who stopped doing decoctions, what do you think about doppelbocks, would they get the same character with the step mash? I wonder if a separate pot for the decoction would work.

Another knife in the back of decoctions for the record, (I love the idea and traditional feel of doing them and have defended them vigorously in the past).
The recent Zymurgy posted the winning Light lager, Pilsner, Dark Lager, Light Hybrid and Bock NHC winners and they are all SINGLE INFUSION recipes!?? The Euro Amber Vienna had a single decoction.
Having won homebrew comps and having had ridiculous score sheets as well, I understand how subjective it can be, but I am surprised as well, thoughts?
