What are people’s thoughts about using enzymes, and specifically ALDC? After listening to this podcast episode, I wonder if this could be worthwhile for reducing diacetyl? https://itunes.apple.com/no/podcast/mas ... 48005?mt=2

Do you feel you need it as a per brew basis? It seems like this is more a remedy when things first has gone south. A healthy pitch, oxygen and temp schedule should give you a healthy fermentation.

No, just interested. For commercial brewers it seems sensible.

You can't actually add pure enzymes due to Reinheitsgebot, although afaik there are german brewers which add stuff when "no one's looking".
