That's good stuff! I take it that this test was done with Czech less modified malt, I suppose there could be different results with different malts? I'd love to get my hands on some of that malt.

Wonder if there may have been a different outcome if the infusion and single decoction incorporated a beta glucan and protein rest? Seems they were at a disadvantage if they used under modified malt.

This paper also found an increase in oxidizable polyphenols by going to two step decoction mashing. In it, they discuss the antioxidant potential of the polyphenols, as well as concentrations. I found it very interesting
