Speidel does variable capacity stainless steel tanks . These have a "floating" lid which may provide for a convenient turnkey solution.

Another question on mash caps. Do I absolutely have to use one if I keep the lid on during the mash? I'm having a hard time coming up with a good workable solution that doesn't require spending more money, and I honestly want to minimize my expenditures on this low DO experiment until I'm convinced I wanna go in full bore.
