These motors all look great. I'd opt for a geared transmission given the choice.
Plum couplings are also great. They make disassembly rather quick.
As far as the gap settings are concerned I'd tighten them cautiously. Too tight a gap and the equipment can take some pretty nasty damage (unless a torque limiter is fitted).
Ideally one should mill as fine as possible, but that will require more than 2 rollers. There is a degree of compromise vis a vis a professional mill. I am sure we can take that hit on efficiency as home brewers.

These gears seem to fit better, tho they Calc out to be .010 to tight.

I really love ie those MM 3 roller mills, esp the ones with the keyed shaft... One day I'm gonna acquire one... There are other priorities first

Anyone use, or think, something like milling some cheap oats or rice after wet milling would help keep the rollers in good shape? Might help get some of the wet gunk off.

I run a couple of hand fills of dry malt after. And then vacuum it with my wet/dry vac

If you get wet gunk on the mills then you soaked rather than conditioned your grains... Maybe a lower dose of water would be needed?
Most importantly, try having the water at 80C if possible.
