How was the 28% utilization baseline value from the Helles paper arrived at?
I have always used the Tinseth table and it seems that 28% is high given the tables and the gravity of the beer. I don't question the veracity one bit, but am just curious so I can feed a number I understand into my spreadsheet.

Actually utilization can vary from 25-31 dependent on many factors but we picked 28 based on our testings. Utilization is based on BSAG. If you want to get very untechincal minus ~5 from tinseth and call it a day. So 20ibu BSAG would be ~25ibu Tinseth. For the case of our papers Helles I believe we said 16ibu, so that would be 11-12ibu when using tinseth.

No, tinseth is 5ibu too hot. Meaning a 16ibu Helles tinseth would be a 21 ibu bsag beer, which for us was very different. I think in our testing the group determined we could pick up 2-3ibu differences.
So you would target 16ibu bsag using the formula in the paper. If you just did tinseth not following the paper and you hopped to 16ibu, it would really be 21. So therefor to target 16ibu tinseth you would hop to 11ibu.
This is speaking in general terms though it all depends on your ultization number.

Since no sparge is being implemented here and higher ratios of water to grist used, does the thickness of the mash affect the values of utilization?
