There is a lot of confusion (homebrewer) over what occurs (or should occur) during lagering. Here is a nice explanation of a classic Bavarian secondary fermentation and cold lagering.

Spunden carbonated beers are truly amazing and eliminates all of the oxygen from the serving vessel. I won't ever go back to force carbonating.
