Not sure how many of you are into making sausages,etc. but from the couple videos I've watched, he seems legit. Most of the charcuterie on Youtube seems to center around Italian styles, so it was nice to find someone doing German style.

Just as Herr Eckkehard said.. you can't use too many fried onions !
I think I could feel the deposits forming on my coronary arteries while I ate the stuff but damn is this good on bread and pretzels too. Just use a good quality of pastured pork because you can smell the difference when rendering the fat.
