Lately I've been trying out Wyeast 2000 Budvar in some Czech Lagers. I had some problems with it at first. I usually pitch two smack packs into my 3 gal and took a chance on some 4 month old yeast and it didn't work out. Dumb on my part, should of done a starter, ended up mixing in some Wy2124 slurry to get her going. Tried again with some fresher yeast and it took off in 24 hours. Anyone use this yeast before? Another one I'd like to try is the PU strain.

I am a huge fan of WLP835, German Lager X. Said to be the Andechs strain - one of my absolute favorite German breweries. If White Labs sold this yeast year round, I would make 100% of my lagers with it, no question.
Unfortunately it's a platinum strain. I've been rotating through WLP833, WY2206, WY2124, WLP838, and I like them all quite a bit but each has a different character. I guess if I had to choose a favorite among that group it would be WLP833 (seems to be a popular choice...).
