Per the paper, zinc and manganese are to be eliminated from the brewing system altogether.

I know the Wyeast yeast nutrient that I typically use contains both zinc and manganese so I assume you all are not adding that to the kettle.

What about in your starters? Is it safe at that point in the process if you are decanting and pitching just the slurry or is it best avoided?

Boil, start chill and chill below boil-say 180, add smb stir in, continue chilling to strike. That's what I do.

From my sulfite strip testing, I'm not convinced that much boils off from boiling. The sulfur dioxide form will, but sulfite levels stay high through the entire boil. I'm more concerned with ensuring DO from the water consumes as little SMB as possible. Just make sure you add the SMB after you boil and before you begin any transfers.

I have some Campden tablets I bought from Morebeer.com. I double-checked the website and they say they are SMB and not PMB, but I was wondering if anyone else has any experience with these. I just want to be sure. I don't want to go through the whole process and find out that their Campden tabs are mislabeled.

For what its worth, I have never seen a SMB campden tablet. I work in a brewshop and we only sell PMB tabs.

SMB is ~1 dollar for 4 ounces. Dirt cheap
