I don't bother with a cap. It sounds like a good idea but it's tricky with my setup. I don't lift the lid and ensure the agitation speed is not excessive. SMB does a nice job keeping it in check. It's a surprisingly elegant method for home brewers to compensate for the disadvantages not having a system at one's disposal.

Using agitators there is little other choice. A properly closed system might even get away with a lower dose. It all depends on ones system and process. I'm afraid there are only ballparks and everyone needs to find what works best for them.

It's very worth-while perusing though.

I would never consider making another lager without degassed water, avoiding oxygen intake like the plague.

Basically it's a fancy stainless Spring all around the pot, connected via Tee to the valve.

I'm doing no-sparge though (faster), but can pretty much do any schedule with ease on this one. Initially it started out as decoction system.
