Heating the strike water I treated yesterday, eager to see how it turns out. The only changes from the recipe is I changed one of the % of Carahell with melanoidin, and using WLP830.
One question though: should I add irish moss and clarity ferm?

Did you treat and leave open? Are you attempting what the paper says or something else?
Make sure if you all following the paper's rule of.. Boil strike, cool a bit, add SMB, mix, and chill to strike, otherwise all bets are off.

I had a lid on it, almost full. I know it's not ideal, but it wasn't possible to follow the instructions completely. Boil again maybe?

To be clear, I'm not trying to be discouraging, just trying to point out that boiling and sulfite treating the water the day before probably won't work, and more importantly why.
Afaik, the clarity of those beers is entirely due to good mashing, boil, and fermentation handling. I would leave all the additives out and stick to the recipe, any deviation could potentially influence the outcome, imo

I don't treat my beers with any clarifiers.
They typically take a few weeks of lagering, then all of a sudden, they're clear.

Boil the strike water, add the SMB and then chill it? Or chill it first and then add SMB? Sounds like SMB should be added before chilling so it's there to protect the water as you chill it but I don't know if 212° water has an adverse impact on SMB.

The SMB can be potentially partially boiled off.
Force chill, add SMB, mix well without aerating, and give the SMB 5 minutes to clean up any last bit of oxygen that got in before you dough in.
